Easy Peach Crisp

The peaches have been so sweet and juicy this year and I can’t seem to get enough of them. There aren’t really words to describe a perfectly ripe peach and the ones that we bought here are knee-weakening. I whipped up this very simple crisp that allows the sweetness of the peaches to shine through. If your peaches aren’t that sweet, I would add a little extra sweetener with the peaches to compensate. I used maple sugar crystals as the sweetener, but if you can’t find that, you could use cane or turbinado sugar (or even maple syrup). Its best served with fresh whipped cream or vanilla ice cream.

Easy Peach Crisp
7 peaches, diced
1/4 cup maple sugar crystals (or sugar)
1/4 teaspoon sea salt
Topping:
1 cup oats
1/4 cup maple sugar crystals
4 tablespoons melted butter
1/2 cup chopped walnuts
1/4 teaspoon sea salt
1. Heat oven to 375 degrees
2. Toss peaches with sugar and salt and place in an 8x8 baking dish.
3. In a bowl, mix all of the topping ingredients together until well combined
4. Spread topping over peaches in the baking dish. Bake for 30 minutes and serve warm with vanilla ice cream or fresh whipped cream.
