Sweet Onion and Thyme Dip


This dip is like a grown-up French Onion Dip with more personality. I love it with the multi-grain flatbreads as an after-work snack. Its VERY easy to whip up and has tons of flavor, and doesn’t pack a calorie wallop.

Sweet Onion and Thyme Dip
2 cups (12oz) finely chopped Maui, Vidalia or other sweet onion
1 tbsp. olive oil
2 tsp chopped fresh thyme leaves, plus thyme springs
3/4 tsp sea salt
1/4 tsp pepper
1 1/2 cups plain low-fat Greek yogurt (or sour cream)
Procedure:
1. Heat oil in a large frying pan over medium heat. Add onion and saute, stirring often, until just golden, about 15 minutes. Add thyme, salt and pepper and cook another minute. Let cool.
2. Stir in yogurt and transfer to a bowl. Adjust salt to taste.
3. Chill at least thirty minutes and garnish with thyme sprigs. Serve with bagel chips or flatbreads.
