Double Apple Bread


So, I sent my love out for some apple cider to poach pears in, and she returns to me with a case of apples and no cider. Apparently they our farmer’s market was fresh out of cider and she got a great deal on the case and couldn’t resist. The culinary gauntlet had been thrown down and thus began my weekend of apples. I started with a crockpot applesauce (cored apples, plus a half cup of water, plus a cinnamon stick and you have cooked apples 8 hours later) and then moved onto a delicious and moist low-fat apple bread that uses both applesauce AND diced apples. That used up an eighth of the case, so expect a few more before the week is done….

Double Apple Bread
Ingredients
1 cup applesauce (chunky or smooth)
2 eggs
1 egg white
1 cups maple sugar crystals (if using sweetened applesauce, use only 3/4 cups of sugar, for a less sweet taste)
1/4 cup molasses
2 teaspoon vanilla
3 cups apples (shredded or finely diced)
3 cups whole wheat flour
2 teaspoons cinnamon
1/4 teaspoon nutmeg
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups chopped nuts (optional-I used hazelnuts)
Directions:
1. Set oven to 325 degrees F.
2. Set oven rack to second-lowest position.
3. Grease two 9 x 5-in loaf pans or use mini loaf pans (I like the mini's)
4. Chop or grate the apples; set aside.
5. In a large bowl, combine the applesauce, eggs, crystals, molasses and vanilla.
6. Sift togethe the flour, cinnamon, baking soda and salt.
7. By hand mixing with a wooden spoon mix the dry ingredients to the applesauce mixture.
8. Add in the shredded/chopped apples and the nuts (if using).
9. Transfer mixture to the prepared loaf pans.
10. Bake for 75 mins or until loaf breads test done.
