Green Tomato Bonanza

I just spent a glorious weekend in Maine, exploring Portland and south (more on that later) and we stopped at Kerry’s parents in Connecticut on our way back. Her mother has a garden that seems to have been raised on a regular dose of steriods. The tomato plants are brimming with full fruit, the herbs, huge and bushy, and the hydrangeas completely awash with rose-tinged flowers. Jo-Ann, Kerry’s mom, was concerned about the hundreds of green tomatoes that would be still on the plants when the first frost arrives. We brainstormed for a bit about what good could come from that volume of green tomatoes. We came up with Green Tomato Pie, Green Tomato Bread (like Zucchini Bread), Green Tomato Salsa….and much more. We left for Brooklyn with all these ideas, 50 pounds of green tomatoes and Jo-Ann’s canning kit. My task this week is to see what I can create.
