Herbed Cucumber Soup

My cucumbers and herbs are going crazy right now so this was a way of putting them to very good use. This is a very simple and delicious cold soup that is perfect for hot late August days.

Herbed Cucumber Soup
Ingredients:
8 kirby cucumbers, peeled and chopped
1/2 cup fat-free Greek yogurt
1/4 rice wine vinegar
1 cup mixed fresh herbs like basil, chives and parsley, chopped
Zest of one lemon
1 tablespoon salt ( or more to taste)
Jalepeno slices (optional garnish)

Procedure:
Puree all ingredients together. Adjust salt and vinegar to taste. Serve cold.
