Watermelon Sugar

Come holiday time, I like a festive beverage. I’m usually a vino girl on the whole but a holiday with fireworks seems to call for something more extravagant and celebratory. I prefer the limey drinks…like margaritas, mojitos, etc. Despite the name of this beverage, its actually not very sweet at all. Play around with the addition of the agave/simple syrup depending on how sweet the watermelon is. In my opinion, it has the perfect balance of spicy, sour, and sweet and makes for a perfect happy hour cocktail.

Watermelon Sugar
Makes one drink

Ingredients:

Equal parts salt, sugar, and chipotle powder, mixed to rim the glass

Two 3 inch square chunks of watermelon without seeds
1/2 ounce simple syrup or agave nectar
3/4 ounce fresh lime juice
1/2 ounce mezcal, preferably Del Maguey San Luis or other high quality mezcal
1 1/2 ounces of silver tequila, preferably Herradura

Directions:

Wet the rim of a cocktail or margarita glass. In a blender, add ice and the ingredients above and blend until ice is just crushed and its frothy. Pour into glasses and garnish with lime or watermelon slice.
